  • Divide meat into 8 equal portions (~¼ lb each).

  • Form thin, evenly sized patties slightly wider than the bun.

  • Season with salt and pepper on both sides.

3. Smoke the Patties:

  • Place patties on the grill and smoke for 15–20 minutes at 225°F until internal temp is about 110–115°F.

4. Sear & Stack:

  • Increase grill temp to 450–500°F, or finish on a griddle or cast iron.

  • Sear patties for 1–2 minutes per side, adding cheese during the last minute.

  • Toast buns during the final 2 minutes.

5. Assemble the Stack:

  • Bottom bun

  • Burger sauce

  • Lettuce

  • 1 patty with cheddar

  • 1 patty with American

  • 2 slices bacon

  • Tomato, pickles, onions

  • Top bun with sauce or mayo

Pro Tips:

  • Double-stack burgers only after the final sear to avoid soggy buns.
  • Add a toothpick or skewer to keep them stacked and photo-ready.
  • Serve with smoked fries, onion rings, or slaw to round out the party plate!
