Instructions:
1. Preheat Pellet Grill:
Set to 225°F for smoke session. Use hickory, oak, or mesquite pellets for classic burger flavor.
2. Form the Patties:
Divide meat into 8 equal portions (~¼ lb each).
Form thin, evenly sized patties slightly wider than the bun.
Season with salt and pepper on both sides.
3. Smoke the Patties:
Place patties on the grill and smoke for 15–20 minutes at 225°F until internal temp is about 110–115°F.
4. Sear & Stack:
Increase grill temp to 450–500°F, or finish on a griddle or cast iron.
Sear patties for 1–2 minutes per side, adding cheese during the last minute.
Toast buns during the final 2 minutes.
