Ingredients:

  • 4–6 ears fresh corn, husked
  • 2 tbsp olive oil or melted butter
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Optional toppings: grated Parmesan, chopped cilantro, lime wedges, chili powder, crumbled cotija cheese

 Instructions:

1. Preheat Pellet Grill:

  • Set grill to 375°F using apple, hickory, or mesquite pellets for a smoky touch.

2. Prep the Corn:

  • In a small bowl, mix olive oil or butter with garlic, smoked paprika, salt, and pepper.

  • Brush the mixture evenly over each ear of corn.

3. Grill the Corn:

  • Place corn directly on grill grates.

  • Grill for 30–35 minutes, turning every 10 minutes to ensure even browning.

  • Corn should be slightly charred and tender.

4. Finish & Serve:

  • Serve hot with more butter or oil and your favorite toppings like lime, cheese, or herbs.

  • Want a Mexican-style twist? Add mayo, cotija, chili powder, and lime for elote-style corn!
