Instructions:
1. Preheat Pellet Grill:
Set to 250°F using apple, cherry, or pecan pellets for a sweet, mellow smoke.
2. Prep the Ham:
Remove any packaging and netting.
Let ham sit at room temp for 30 minutes before cooking.
Place ham cut-side down in a foil pan with 1 cup of apple juice or water.
3. Smoke the Ham:
Place pan in the pellet grill and smoke at 250°F for about 2½ to 3 hours, until the internal temp reaches 130°F.
4. Make the Glaze:
In a saucepan, combine honey, brown sugar, mustard, vinegar, and spices.
Simmer gently over low heat for 5 minutes until thickened.
5. Glaze and Finish:
Brush ham generously with glaze.
Increase grill temp to 300°F and cook for another 30–45 minutes, brushing with more glaze every 10–15 minutes until caramelized and internal temp hits 140°F.
6. Rest & Serve:
Let ham rest 15–20 minutes before slicing. Serve with extra glaze or pan drippings!
Pro Tips:
Use spiral-sliced ham for easier serving and more glaze penetration.
For crispy caramelization, broil the ham for 2–3 minutes after grilling.
Pair with scalloped potatoes, smoked green beans, or grilled pineapple.
