Instructions:
1. Preheat Pellet Grill:
Set to 375°F using hickory, oak, or mesquite pellets for a strong grill flavor.
2. Prep the Skewers:
Cut sausages into halves or thirds, or leave whole depending on length.
Thread sausage pieces alternately with peppers, onion, and zucchini on skewers.
Lightly brush or spray with oil and season the veggies.
3. Grill the Sausage Sticks:
Place skewers directly on grill grates.
Grill for 20–25 minutes, rotating every 5–7 minutes, until sausage is browned and veggies are slightly charred.
4. Rest & Serve:
Let rest for 3–5 minutes before serving.
Serve with mustard, BBQ sauce, ranch, or a spicy aioli.
Pro Tips:
Use different sausages (andouille, spicy Italian, bratwurst, chorizo) for variety.
Great served over rice, in pita bread, or chopped into mac & cheese.
Want it cheesy? Add a cube of cheddar or pepper jack between sausage pieces!
