Ingredients:

  • 3 medium zucchini, sliced into ½-inch thick rounds or long planks
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Italian seasoning or dried thyme (optional)

Optional toppings: grated Parmesan, lemon zest, chili flakes, or balsamic glaze

 Instructions:

1. Preheat Pellet Grill:

  • Set to 400°F using applewood, pecan, or oak pellets for a balanced smoky flavor.

2. Season the Zucchini:

  • In a bowl, toss zucchini slices with olive oil, garlic powder, salt, pepper, and herbs.

3. Grill the Zucchini:

  • Place directly on the grill grates or in a grill basket.

  • Grill for 5–7 minutes per side, flipping once, until tender with grill marks.

4. Serve:

  • Transfer to a platter, top with optional garnishes (like Parmesan, lemon zest, or balsamic drizzle), and serve warm.
