Instructions:
1. Preheat Pellet Grill:
Set grill to 400°F using applewood, oak, or cherry pellets for balanced smoke and sweet aroma.
2. Prep the Lobster Tails:
Butterfly each lobster tail: use kitchen shears to cut down the center of the top shell, then gently pull the meat up over the shell while leaving it attached at the base.
Brush tails with olive oil or melted butter. Season lightly with salt, pepper, and paprika.
3. Grill the Lobster Tails:
Place tails meat-side up directly on the grill grates.
Grill for 12–15 minutes, basting with garlic butter during the last 5 minutes.
Lobster is done when it turns opaque and internal temp reaches 135–140°F.
4. Finish with Garlic Butter:
Drizzle remaining garlic butter over finished tails. Garnish with parsley and serve with lemon wedges.
Pro Tips:
For smoky char and juicier tails, close the grill lid and baste often.
Pair with grilled asparagus, lemon rice, or smoked corn on the cob.
Want a twist? Add white wine or chili oil to the garlic butter for depth.
