Grilled Garlic Potatoes

Ingredients:

  • 2 lbs baby potatoes (red, yellow, or mixed) – halved if large
  • 3 tbsp olive oil or melted butter
  • 4 cloves garlic, minced
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp dried rosemary or thyme (or use fresh if you’ve got it)
  • Optional: grated Parmesan, chopped parsley, or squeeze of lemon for garnish

 Instructions:

1. Preheat Your Pellet Grill:

  • Set to 375°F using oak, hickory, or apple pellets.

2. Season the Potatoes:

  • In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, and herbs.

3. Grill the Potatoes:

  • Place potatoes in a cast iron skillet, foil pan, or directly in a grill basket for max char.

  • Cook uncovered for 45–60 minutes, stirring every 15–20 minutes for even browning.

  • Potatoes are done when they’re crispy on the outside and fork-tender.

4. Garnish & Serve:

  • Sprinkle with Parmesan and parsley or squeeze lemon over the top. Serve warm.
