Instructions:
1. Preheat Your Pellet Grill:
Set to 375°F using oak, hickory, or apple pellets.
2. Season the Potatoes:
In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, and herbs.
3. Grill the Potatoes:
Place potatoes in a cast iron skillet, foil pan, or directly in a grill basket for max char.
Cook uncovered for 45–60 minutes, stirring every 15–20 minutes for even browning.
Potatoes are done when they’re crispy on the outside and fork-tender.
4. Garnish & Serve:
Sprinkle with Parmesan and parsley or squeeze lemon over the top. Serve warm.
