Instructions:
1. Preheat Pellet Grill:
Set to 375°F using applewood, pecan, or maple pellets for light, sweet smoke.
2. Prep the Carrots:
In a large bowl, toss carrots with olive oil, garlic, thyme, salt, and pepper until well coated.
3. Grill:
Spread carrots in a single layer on a grill-safe pan, cast iron skillet, or foil tray.
Place on grill and cook for 30–40 minutes, flipping or stirring halfway, until carrots are tender and caramelized on the edges.
4. Finish & Serve:
Optional: drizzle with honey or balsamic glaze just before serving.
Garnish with herbs and serve warm.
Pro Tips:
For extra depth, add a splash of lemon juice or a pinch of red pepper flakes.
