Ingredients:

  • 1½ lbs rainbow carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme or rosemary (or ½ tsp dried)
  • ½ tsp salt
  • ½ tsp black pepper

Optional: drizzle of honey or balsamic glaze for finishing

Optional garnish: chopped parsley or fresh dill

 Instructions:

1. Preheat Pellet Grill:

  • Set to 375°F using applewood, pecan, or maple pellets for light, sweet smoke.

2. Prep the Carrots:

  • In a large bowl, toss carrots with olive oil, garlic, thyme, salt, and pepper until well coated.

3. Grill:

  • Spread carrots in a single layer on a grill-safe pan, cast iron skillet, or foil tray.

  • Place on grill and cook for 30–40 minutes, flipping or stirring halfway, until carrots are tender and caramelized on the edges.

4. Finish & Serve:

  • Optional: drizzle with honey or balsamic glaze just before serving.

  • Garnish with herbs and serve warm.

Pro Tips:

  • For extra depth, add a splash of lemon juice or a pinch of red pepper flakes.

  • Want crispier edges? Increase grill temp to 400°F for the last 5–10 minutes.
