Smoked Bacon Bliss

Ingredients:

  • 1 lb thick-cut bacon
  • ¼ cup brown sugar
  • 1 tbsp maple syrup or honey
  • 1 tsp black pepper
  • ½ tsp cayenne pepper (optional for heat)
  • ½ tsp smoked paprika
  • Optional: pinch of cinnamon or crushed red pepper flakes

 Instructions:

1. Preheat Pellet Grill:

  • Set to 250°F using apple, maple, or pecan pellets for sweet-smoke flavor.

2. Prep the Bacon:

  • Mix brown sugar, maple syrup, black pepper, paprika, and cayenne in a bowl.

  • Lay bacon on a wire rack over a foil-lined baking sheet (or use a grill tray).

  • Brush or spoon glaze over one side of each bacon strip.

3. Smoke It:

  • Place rack or tray on the grill.

  • Smoke for 60–75 minutes, flipping once halfway through and glazing the other side.

  • Bacon should be deep brown, slightly crispy at the edges, and sticky.

4. Cool Slightly & Serve:

  • Let bacon rest for 5–10 minutes—it will firm up as it cools into “bliss mode.”

  • Serve warm or room temp.

  • Want ultra crispy bacon? Let it cook longer at 275°F for the final 10–15 mins.

  • Add crushed pecans or almonds before the last 10 mins for a sweet-savory crunch.
